There are few restaurants I’ve had to wait as long to get into as Sphinx. It seems to be a largely popular restaurant, Probably due to its unique design. It specialises in experimental dishes.
Entry into the restaurant is through the basement door where I was greeted by a pleasant Host by the name of Bailey Mai, He swiftly ushered me to my seat in the dining space up the stairs and handed me a printed menu.

Without giving me much time to peruse the menu I was attended to by a young waitress. She stumbled her way through the chefs specials but had no idea of what any of the dishes consisted of , She made her apologies and went off to find out from the kitchen no sooner had she left my side her place was filled by another waitress. This one seemed much more familiar with the menu and along with the chef's recommendation recommended a few of her own favourites.

When the dish was served It smelt a little unusual, I was feeling adventurous so after finishing my wine mustered up the courage to have a taste. It was foul absolutely disgusting. I could not contain my disgust so entered the kitchen to speak with the chef.
On receiving me review of the meal chef Blanic was very abusive and rude however the head chef apologised for his behaviour and meal and promised to personally prepare my meal.

Instead I ordered The Brisket and clover salad. and true to his Word Chef Wilbur presented me with a beautiful Tender steak which had been hand-massaged for 20 minutes before grilling apparently. It was joined by lightly spiced clover salad and a rich Dressing. It was only a small portion but what an incredible array of flavours. And the tenderest, best texture of Brisket I’ve ever experienced took away all bad taste of my earlier experience with Chef Blanic.
A positive review is the order of the day however I cannot in good conscience recommend this restaurant to you my readers until a staff reshuffle has taken place Chef Wilbur's talent is overshadowed by Chef Blanic's inexperience and lack of culinary knowledge.
